Cornbread!

Morehead City and Beaufort are my favorites.  I would love to live in Beaufort; it is such a charming town.  The inter-coastal waterway and the ocean are just incredible there.  That is my escape place. When life is too much, I go there for the day; eat some good food, wonder through little shops and sit on the beach for hours.  I find it centers me and helps me realize that I am just a small part of this huge world.   It is wonderful in the winter to stand on the beach and be totally alone with not another soul around.  There are always lots of dolphins around to watch.  I may need a quick trip soon!!  I will eat a hushpuppy for you!!

My lovely daughter in law stopped by today with homemade soup and cornbread!  I told her how much we have been talking about cornbread and what a coincidence that she made some.  She also gave me an angel Christmas ornament because she saw it and knew I would like it and a gorgeous bunch of fresh flowers.  She is a nurse, and she tends to take good care of me.

Just got home from 2 doctor visits and a 16 hour fasting.  How excited I was to reheat the soup and cornbread and it tasted incredible!!  Mmmmmmm- you can't beat cornbread!

I remember my mom used to make this ground beef and corn with tomatoe sauce mix and put the corn bread on top and baked it, it was gooooood.

Food seems to trigger so many good childhood memories!  That dish sounds yummy. I may have to try something like that.

TAMALE PIE,  i believe that is what they called, whew, i was gonna lose sleep if i couldnt remember that damn name, lol, but yes, it is very good

Recipes, Ladies?  This sounds like a good winter dish.    Isn't it amazing what we can do with corn meal?

Never had or heard of tamale pie, but sounds good. I love real tamales that are made with the corn husked wrapped around the tamale.

Seems to me black olives and red peppers would be better. Since I would be the only one eating it, I need a store bought version. No room for left overs in fridge.

I don't think is a store-bought version. The good thing about tamale pie is that you can divide it up in smaller portions, freeze it and have it whenever you want.

I don't cook anymore. By the time I get all the stuff, I don't want to take the time to make a mess and make it. If I lived on my own again and worked, then I would make it so I could bring it to work and make others wonder what the heck did I make today that smells good. I don't eat much like I use to and I miss it, nowdays it is usualy a sandwich or a bag of snacks for the day. Eyes are bigger than hat stomach can handle I guess. Gonna have to go get a tamale maybe tomorrow though no restaurant near home carries cornbread alone..

The Boston Market little corn breads are super, but my favorite recipe is this: Open the box of Jiffy Mix and make it according to package directions. Make it into a loaf and be very careful not to overcook it. Serve it warm from the oven loaded with butter, just melting into it. Ooh baby!

It's common. It's not like the masa in a tamale, it is cake-like. Most notably, the corn muffins at Cracker Barrel are not sweet.

Ahhh, Cracker Barrel, only been there once and it's right next to the school I go to I'll have to try it there one day, I want to try their apple cinnamon something pancakes, sounded good, but at lunch instead once after class. I did get a small cornbread fix today though at school. The cafeteria had mini mini muffins of cornbread. It was good as short as it lasted.
