Chili is one of many favorite things I like to eat. Please correct me if I am wrong. Although this recipe is not targeted for a renal diet, it can be eaten with moderate to little concern. Just as I origionally posted, I want to learn about eating properly wile on dialysis so I thought we could do something for eachother. You give me something that you want or like to eat and I will try to make it work. That goes for pre-dialysis people too. Chili (with a kick!)Serves 6 - 81/4 lb bacon - cut into 1/4 inch pieces2 lbs ground beef2 lbs ground porkvegetable oil1 white onion - small to medium dice1 - 2 fresh jalapenos chopped fine. leave the seeds out if you want less spicy, that's where the heat is.6 garlic cloves - chopped fine as you can.1 1/2 tbls dried oregano1/3 cup chili powder1 1/2 tbls ground cumin1/2 tsp cayenne pepper - more or less also contributes to heat14 oz beef broth - low sodium!1 cup brewed coffee - yes. coffee. the darker the better.1 cup water3 tbls coco powder. sound strange right? I love this ingredient but you can omit it for health reasons.28 oz crushed tomatoes - generally I would add 32 oz or so and another 28 oz of stewed tomatoes but this one we need to watch out for. (2) 18 oz cans of red beans or kidney beans - another one to watch out for. I really like the beans! They make after chili time rooty tooty. Just leave them out if necessary or just add half. Don't forget to rinse and drain.Toppers: Mmmm cheese, chopped red onion, fresh cilantro (love this herb), avocado, lime wedges, sour cream (dairy aleart), tortilla chips. Pick any of these or maybe just some low salt crackers.Preparation:render bacon in large heavy duty stock pot over med heat until almost crispadd some vegetable oil if necessaryadd onion and stir for a minute or twoadd jalapeno and stir for a minuteadd garlic and stir for 1 minuteadd beef and pork and brownadd remaining ingredients except for the beanssimmer for an hour or twoyou can skim some fat off the top with a spoon30 minutes or so before it is ready add the beansthere you have it...enjoyremember I am lookin' for feedback about nutrition and such so critique away!Almost forgot - you can substitue cat fofr the pork. yum, yum, good!
