  2 c. sugar
  2 c. flour
  1 tbsp. Rumford baking powder (they didn't have Rumford baking powder 100 years ago. It's made w/o any of the "p" elements)
  6 eggs, beat one at a time

Beat all ingredients together with mixer. Bake in angel food cake pan at 350 degrees for 1 hour or until toothpick comes out clean in the center. Needs no icing, crust is icing.
I don't have an angel food cake pan. I used a bundt pan; it worked just fine.
This simple recipe is really good and because of all of the eggs, it's high in protein and very low in fat :yahoo;

Thanks, James will pass it on to the wife.  I really like sponge cake. Hey, me and the grandsons (ages 15 months and 3 years) have never met a cake we didn't like. :thx;

Funny, the recipe ia 100 yrs. old. It's good. I didn't mean to put this in Easter recipes. It just goes to show you. . .

Sponge cake is kinda' like twinkies, except no cream center. I remember back when there was the scare about (late 70s) store packaging being vulnerable. a friend of mine got some Twinkies, took them home, took a straw and sucked out the cream center and filled the center back uo with ketchup, carefully ironed the package closed and snuck them back on the shelf. I never heard about the result. To tell the truth I'm not sure that the story was true, but the thought was funny.

I am going to try it.  I picked up extra flour and sugar last night because I am running low.  Yes, with some fresh picked strawberries from across the street.  Yum

It's REALLY yummy!!!  I was actually kinda surprised because it was just a bit too easy and simple to be sooooo good.  We toped with some really fresh sweet pinapple and it was crazy good, but really something we enjoy just "as is" too..  Hubby gonna take a piece to dialysis tomorrow.. Actually looking forward to it..hehe
