Deviled Eggs

Recipe from "Kidney Kooking" cookbook from the National Kidney Foundation of Georgia.

Portions: 1

Serving size: 2 halves

Ingredients

    * 1 hard-boiled egg
    * 1 teaspoon pimentos
    * 1/4 teaspoon dry mustard
    * 1 tablespoon mayonnaise
    * 1/4 teaspoon pepper
    * paprika (sprinkle)

Preparation 

   1. Cut egg lengthwise and remove yolk.
   2. Mix yolk, pimentos, dry mustard, mayonnaise and pepper.
   3. Place mixture inside egg whites in equal parts.
   4. Sprinkle eggs with paprika.

Nutrients per serving

    * Calories: 137
    * Protein: 6 g
    * Carbohydrate 1 g
    * Fat: 11 g
    * Cholesterol: 353 mg
    * Sodium: 176 mg
    * Potassium: 66 mg
    * Phosphorus: 94 mg
    * Calcium 34 mg
    * Fiber 0.3 g

    * 2 fat

Thank you that looks like something my father would enjoy. 

He has stomach issues but is oh so picky in his ole age.  Finding things he's used to we think will stay down is such a problem.  Trying like crazy to find new "old" ideas that are okay with his diet is hard.
