Just wanted to check in since it's been a while since I've posted here!  I have been soooo busy preparing for the holidays!  I ordered a bunch of gifts online and they haven't shown up yet so I'm sweatin'!  Yes, I procrastinated as usual.  I sent my cards out on Tuesday and a few more today.  I still have to find gifts for my two nieces and nephew!  Already got hubby's and dad's.  Now I'm waiting on the ones for my sisters and grandmother.

So if I don't post here for a while, don't panick!  I'm out doing things for Christmas.  I am also cooking on Christmas Day but we all decided to not do a turkey this time.  Instead I am going to make a taco casserole thing that I make!  I know everyone likes loves it!

Nov. 1979 - Diagnosed with glomerulonephritis of unknown origin by Dr. Robert
                  Hickman
Dec. 1979 - Diagnosed with Viral Pneumonia
Late Dec. 1979 - Emergency surgery to place a Scribner Shunt in left arm for dialysis
Jan. 1980 - Start hemodialysis until recovered from viral pneumonia
Feb. 27, 1980 - Receive 5 antigen living related transplant from father
Mar. 3, 1987 - PTH removed and part of one placed in left arm.  Fistula also placed in right arm.
Sept. 1988 - Start hemodialysis
Feb. 4, 1989 - Receive 6 antigen perfect match cadaveric transplant
Jan. 1994 - Return to hemodialysis
Oct. 18, 1996 - Receive 6 antigen perfect match cadaveric transplant
Nov. 22, 1996 - Emergency surgery to repair aneurysm to artery in kidney
Dec. 20, 1996 - Emergency surgery to repair aneurysm.  Kidney removed due to infection which has spread down right leg to abt mid thigh.
Apr. 1997 - Arterial bypass surgery to restore arterial blood flow to right leg
July 29, 1998 - Receive 6 antigen perfect match cadaveric transplant
Sept. 6, 2002 - Return to hemodialysis
Dec. 7, 2002 Sm. intestine ruptures while home alone. Still conscious upon arrival at hospital.
Dec. 8. 2002 - Surgery to repair ruptured bowel.  The prognosis is not good.  Surgeon tells family to prepare for the worse.  Spend a week in a coma and 3 months in hospital.  Takes abt a year and a half to completely recover.

Glad you are OK and just busy with the Holidays. There are a few members we usually see here and haven't seen lately. We get concerned when that happens.

Recipe please!

My aunt made this for my family once when she came to visit my mom and me and my sisters.  I think I was abt 14 when she came for that visit.  I watched her make it and I have been making it every since!  Ironically, she lost the recipe. 

Here is the recipe:

1-2 lbs. Extra Lean ground beef
1 1-lb, 15 oz. can Refried Beans
1 (15-oz.) can Tomato Sauce
1 pkt. Mild Taco Seasoning (low sodium if you can find it)
1 bag Unsalted Tortilla Chips
2 c. Shredded Mozzarella Cheese
2 c. Shredded Cheddar Cheese
6 med. Tomatoes, Chopped
1 Onion, Chopped
Shredded Lettuce
Salsa, Optional

Preheat oven to 350˚.  Brown ground beef and drain.  Add tomato sauce to the pan and simmer until thickened.  Pour mixture into a large pot (I use a Dutch Oven) add refried beans and stir in tortilla chips crumbling them as you stir them in.  Add enough to thicken the mixture.  When the chips are softened pour into an 11x13 baking dish and top with shredded cheese.  Bake for 20 minutes or until cheese is melted.  Let stand for abt 5 minutes.  Serve with tomatoes, onion, lettuce, salsa and any other toppings you like.  You can also put everything on top of the casserole. 

I use the pre shredded Mexican mixture of cheese without the spices.  It has low moisture and doesn't produce a lot of oil when melted.  It is also more convenient.

Hubby also uses soft taco shells to stuff his in.  This is very popular in my family.  My sisters are always calling me to get the recipe again!  lol
