I AM NEW TO THE SITE AND A NON-DIALYSIS PATIENT. I AM LOOKING FOR RECIPES FOR SUMMER SQUASH RECEIPE -LOW SODIUM AND LOW PROTEIN WITHOUT TOMATOES OR MILK PRODUCTS. THANKS

Hi Allenann, Since squash is high in potassium, I don't cook with it much.

@ Rerun. I don't like squash, but I had no idea it was high in potassium. Good to know.

When I first started this while thing my nutritionist told me that winter squash ar high in potassium, but summer squash are relatively low. I wouldn't go eating them every day, but like most other things on our restrictive diet I don't see what a little bit here and there would be so bad. Also, I don't know if it would work, but I'm a potato-fiend so I cut them into small cubes and soak them over night to draw out some of the potassium, so it might work on squash (I don't really care for squash, so I haven't tried it).
