1 red bell pepper, finely chopped

1 Vidalia onion, finely chopped

1 cucumber, diced

16 oz. bottled fat-free, no sugar salad dressing

Juice from 1 lime

1 tsp. black pepper

Cook pasta according to directions on package. Rinse with cold water and drain.

In large bowl, mix pasta with all other ingredients. Refrigerate over night if possible.

Serve alone or in lettuce-cups. Garnish with green onion slices if desired.

Make it even healthier! Use oil and vinegar as the dressing, or choose salad dressing that is not cream-based.
