Title: Cornbread!

Strange things happen around here.  Last week it was the bulls, today it was a ton of homemade cornbread.  Here's the cornbread!

mmmm cornbread. I'll take it any way I can get it. With chili, ham 'n beans, honey, butter, jelly, or heck, plain is good too!!!  That is an odd snack, especially for the office, but what the hey...MUCH better than a cake or donuts..right????

I dream of having this again someday, A dish of rice with beans on top. Then put raw onions and hot peppers on too. Finish it off with a big ole piece of cornbread. Yahoo!

AHHHHH, now we are talking. I would have serious problems staying away from that pile of cornbread, its always been a weakness for me! When I get my transplants, I will definitely have to try some again. Just today I was walking through the store "admiring" all the good foods I have to leave alone, now that  :'(

I just has this a few weeks ago.  I made a huge crockpot full of chilie (Dennisons) and made little cornbread muffins and invited the neighbors over.  That way I could have a tiny bowl and 1 tiny muffin and feel satisfied!

I've never tasted corn bread either.  Would have trouble finding it in stores here I think.  Closest thing I've probably come to tasting it is when I made a tamale pie and the top was made from corn meal.  Is corn bread made from corn meal???

It's easy to make, and really good if you make it in a skillet:

Skillet Cornbread Southern Style

 3      tablespoons   vegetable shortening
2 1/4    cups cornmeal
1/4    cup all-purpose flour
2    teaspoons baking powder
1/4    teaspoon salt (optional)
2 1/4    cups milk
1    egg


   1. Place shortening in a 10-inch skillet with ovenproof handle or 9-inch square baking pan.
   2. Place in oven.
   3. Heat to 425°.
   4. Skillet will be very hot and shortening will be melted.
   5. While skillet is heating, combine dry ingredients; add milk and egg, mixing well.
   6. Add melted shortening; mix well.
   7. Pour batter into HOT prepared skillet.
   8. BAKE 35 to 40 minutes OR until surface cracks and edges are deep golden brown and pull away from sides of pan.
   9. Serve warm.
  10. Traditionalists make this in a cast iron skillet with white corn meal.

we have a restaurant here that serves corn fritters with their meals. they are about the size of donut holes and truly yummy. so good you could overdose on them very easily.

Corn fritters--yummy!  I live in the south and cornbread or biscuits are served with everything, every meal!  I am not complaining!  Then they bring on the hushpuppies--another corn meal product.  Not like you get at the chain restaurants (LongJohnSilvers, etc) but wonderful golden brown drops of heaven.   I don't have much appetite, but I am making myself very hungry!!

When the Native Americans gave corn to the Pilgrims, they didn't know how much we would do with it!  Corn cakes--one more reason to love corn!  And then we can go in another direction--how about corn chowder?  Yummy on a cold winter's day------with corn bread on the side of course! :rofl;

My wife loves the Chicken corn chowder Campbell's makes...in fact she's eating right now as I right this!  Too funny!  She also so said for quick, easy, and tastey corn bread try Jiffy mix...it's great!

For any of you who don't want to go to the trouble to make it..if you head over to Marie Callendar's for a meal they serve each one with a big slab of cornbread and honey butter.  It's yummy!

Not sure if they still do or not, but Boston Market made those mini loafs of corn bread. Wonder were I can go tomorrow to get some corn bread without having to make it.

Jiffy cornbread mix...I may have to get some of that to make this weekend!! For hushpuppies, there's a restaurant in Morehead City, NC that makes the absolute BEST!! Serve warm with butter, yummy! Here's their recipe (from www.sanitaryfishmarket.com).

1 lb Fine Corn Meal

1 Egg

1 Tablespoon Salt

1Tablespoon Sugar

Pinch Baking Soda

1 Cup Buttermilk

Stir, adding water, to thick consistency. Drop in deep fat [preferably Duke's Peanut Oil]. Cook in temperature of 375°. Recipe serves six. Enjoy!

KT-  Sanitary is one of my favorite restaurants!  There is no better sea food than theirs and you are sitting right on the water front.  It is about a 2 1/2 hour drive, close enough for a day trip.   There hush puppies melt in your mouth!

paris, I used to live about 20 minutes from there in the winter (45 minutes in th summer, with traffic). I sure miss sitting there watching the sunset and their hushpuppies!!

Morehead City and Beaufort are my favorites.  I would love to live in Beaufort; it is such a charming town.  The inter-coastal waterway and the ocean are just incredible there.  That is my escape place. When life is too much, I go there for the day; eat some good food, wonder through little shops and sit on the beach for hours.  I find it centers me and helps me realize that I am just a small part of this huge world.   It is wonderful in the winter to stand on the beach and be totally alone with not another soul around.  There are always lots of dolphins around to watch.  I may need a quick trip soon!!  I will eat a hushpuppy for you!!

My lovely daughter in law stopped by today with homemade soup and cornbread!  I told her how much we have been talking about cornbread and what a coincidence that she made some.  She also gave me an angel Christmas ornament because she saw it and knew I would like it and a gorgeous bunch of fresh flowers.  She is a nurse, and she tends to take good care of me.

Just got home from 2 doctor visits and a 16 hour fasting.  How excited I was to reheat the soup and cornbread and it tasted incredible!!  Mmmmmmm- you can't beat cornbread!

I remember my mom used to make this ground beef and corn with tomatoe sauce mix and put the corn bread on top and baked it, it was gooooood.  :2thumbsup;

Never had or heard of tamale pie, but sounds good. I love real tamales that are made with the corn husked wrapped around the tamale.

I don't think is a store-bought version. The good thing about tamale pie is that you can divide it up in smaller portions, freeze it and have it whenever you want.

I don't cook anymore. By the time I get all the stuff, I don't want to take the time to make a mess and make it. If I lived on my own again and worked, then I would make it so I could bring it to work and make others wonder what the heck did I make today that smells good. I don't eat much like I use to and I miss it, nowdays it is usualy a sandwich or a bag of snacks for the day. Eyes are bigger than hat stomach can handle I guess. Gonna have to go get a tamale maybe tomorrow though no restaurant near home carries cornbread alone..

It's common. It's not like the masa in a tamale, it is cake-like. Most notably, the corn muffins at Cracker Barrel are not sweet.

Ahhh, Cracker Barrel, only been there once and it's right next to the school I go to I'll have to try it there one day, I want to try their apple cinnamon something pancakes, sounded good, but at lunch instead once after class. I did get a small cornbread fix today though at school. The cafeteria had mini mini muffins of cornbread. It was good as short as it lasted.
