Renal-Friendly Brisket Recipe

Adapted from "The Renal Patient's Guide to Good Eating" by Judith A. Curtis. 120 grams is approx. 4.2 ounces. Phophrous = 52mg

3¼ hours | 15 min prep

SERVES 21  :o

    * 4 lbs beef brisket
    * 2 large onions
    * 3 garlic cloves, minced
    * 1 bay leaf, crushed
    * 1 tablespoon paprika
    * 1 teaspoon instant coffee
    * 1/8 teaspoon black pepper
    * 1/8 teaspoon thyme
    * 6 ounces tomato paste
    * 1 cup Burgundy wine

   1. Sear brisket on all sides in hot dutch oven.
   2. Add remaining ingedients on top and around meat.
   3. Cover and simmer for 3 hours.
   4. Add no other liquid, it forms it's own gravy.
   5. Each serving will be 4.2 ounces according to diet followed by renal patients.

what does the wine taste like
is it only for cooking
and what would be the difference if I left it out

The wine will give it a richer taste.  You could possibly add something like worcestershire sauce for a depth of flavor, but you would need to watch the salt.  Or maybe just add a little more thyme and garlic depending on how flavorful you like your food.

Renal-Friendly Jerk Pork Tenderloin Recipe
This recipe comes from the brand new cookbook "Kidney Friendly Comfort Foods" endorsed by Isaac Hayes. This dish is not only VERY low in sodium, phosphorus and potassium, it's also very delicious and simple to prepare! As a dialysis patient, I'm always on the lookout for these kinds of recipes and I just thought I'd share!

2¾ hours | 2 hours prep

SERVES 8

    * 2 lbs boneless pork loin roast
    * 3 cloves garlic, minced
    * 1/2 teaspoon black pepper
    * 1 teaspoon ground cumin
    * 2 teaspoons ground allspice
    * 1 teaspoon chili powder
    * 1 teaspoon ground cinnamon
    * 2 tablespoons olive oil
    * 6 scallions, coarsely chopped
    * cayenne pepper or scotch bonnet pepper, to taste (optional)

   1. Preheat oven to 350 degrees.
   2. Mix last 8 ingredients and coat pork tenderloin.
   3. Marinate at least 2 hours.
   4. Roast uncovered for about 35 minutes or until internal temperature is 160 degrees.
   5. Let roast sit about 10 minutes to let juices settle.
   6. Slice and serve!

Renal-Friendly Macaroni Salad Recipe
Good for a picnic! I thought I would post my own personal recipes for foods that are friendly to people on dialysis. This helps ease the pain of watching people scarf potato salad all around you. Hahaha! Seriously though, it's delicious!

45 min | 30 min prep

SERVES 10

    * 1 lb elbow macaroni
    * 1/2 cup celery, thin-sliced
    * 1/4 cup sweet onion, fine diced
    * 2 garlic cloves, minced
    * 1 small red sweet bell pepper, finely diced
    * 1 1/2 cups mayonnaise
    * 2 teaspoons Dijon mustard
    * 1 teaspoon apple cider vinegar
    * 1/4 cup sweet pickle relish
    * 1 teaspoon sugar
    * 1/2 teaspoon black pepper
    * 1/4 teaspoon celery seed
    * 3 ounces low-sodium bacon, cooked and crumbled (optional)

   1. Mix cooled macaroni, celery, onions, bell pepper together in a large bowl.
   2. In a separate bowl mix together the mayonnaise, mustard, vinegar, pickle relish, sugar, salt, and celery seed, stirring well.
   3. Stir dressing into the macaroni mixture.
   4. Stir in the crumbled bacon.
   5. Serve chilled.

I think you could use beef broth (although again, be careful of the salt)

Home Made Beef Broth
Low Salt/Sodium Recipe

Prepare this home made broth instead of the canned variety to reduce the sodium in homemade soups and stews.

Ingredients:
4 pounds meaty beef soupbones (shank crosscuts, short ribs, or arm bones)
Three carrots, cut up
Two medium onions, cut up
Ten whole black peppers
Four bay leaves
1 tablespoon dried basil or thyme, crushed
Two cloves garlic, halved
1 teaspoon Morton Lite salt
Cover a baking sheet with waxed paper. Place soup bones in a large shallow roasting pan. Bake in a 450-degree oven about 30 minutes or until well browned, turning once. Place soup bones in a large Dutch oven. Pour 1/2-cup water into the roasting pan, scraping up crusty browned bits. Add water mixture to Dutch oven. Add carrots, onions, celery, parsley, peppers, bay leaves, basil, garlic, salt, and ten cups water. Bring to boiling; reduce heat. Cover and simmer 3-1/2 hours. Remove soup bones.

    * 1/2 cup breadcrumbs
    * 1/2 teaspoon thyme
    * 1/16 teaspoon basil
    * 1 teaspoon oregano
    * 1/16 teaspoon pepper
    * 3 tablespoons parmesan cheese
    * 1/2 cup butter

   1. Cut chicken breasts into small pieces.
   2. Combine breadcrumbs, thyme, basil, oregano, pepper and Parmesan cheese.
   3. Dip chicken pieces into melted butter.
   4. Then, roll chicken pieces in dry ingredents.
   5. Bake in 400 degree oven for 20 minutes.

August 12, 2008 - Renowned soul singer Isaac Hayes, who passed away on Sunday, is reported to have died of a stroke. No official autopsy has been conducted, however, Hayes's family doctor listed a stroke as the cause of his death, and Hayes had previously suffered a stroke in 2006.

Yes, that was him.

He was the original ladies' man, a king of soul known for his sultry sound and knee-weakening lyrics.
And that voice, that sexy voice. Yeah, we can dig it.
But there's much more to soul and R&B music great Isaac Hayes than his legendary "Shaft" movie soundtrack and a boatload of Grammys.
He also lent his voice to his role as the chef on "South Park," this solid soulster is penning cookbooks.
 
As a child growing up in a rural town near Memphis, Tenn., Hayes learned to cook while helping out in his grandmother's kitchen, and loved it so much he kept cooking his entire life.
 
Hayes, 62, debuted some of his Southern recipe favorites five years ago in an autobiographical cookbook titled "Cooking With Heart & Soul: Making Music in the Kitchen with Family and Friends" - a collection of personal stories and family food traditions with recipes.

 
That was followed by his second cookbook, "Kidney Friendly Comfort Foods: A Collection of Recipes for Eating Well With Chronic Kidney Disease," (Shire, no cost), a free book that is a tribute to friend and fellow music legend Barry White, who died of kidney failure in 2003 after battling it for years.

About 4 oz (118g) of chicken breast has 27 grams of protein, 231 mg of phosphorus and 302 mg potassium.
